Tabbouleh salad with Pomegranate,couscous
Ingredients (serves 8 )
60gram(1/3 cup) burghul
175ml boiling water
1 Pomegranate , quartered, seeds removed
2 large tomatoes, finely chopped
1/4 cup lemon juice
4 cups chopped fresh flat-leaf parsley leaves
1 cup chopped fresh mint leaves
4 spring onions, thinly sliced
1/4 cup olive oil
Salt and black pepper

Method
Step1
Place the burghul in a large heatproof bowl. Add the boiling water and set aside for 10 minutes to soak. Drain.
Step 2
Add the tomato ,parsley, mint, pomegranate seeds, oil and lemon juice. Season with salt and pepper. Mix until well combined.
